About our molecular bar setup

A molecular bar takes cocktail-making into the territory of culinary technique. Using tools and methods borrowed from modern kitchens — nitrous oxide siphons, agar gels, sous-vide spirit infusions, edible films and flavoured foams — our mixologists create drinks that look, smell and taste unlike anything a standard bar produces.

In Delhi, the molecular bar is growing in popularity at luxury wedding receptions, corporate brand activations, product launches and high-end private parties where the host wants an experience that signals a genuine investment in their guests. Every element is planned ahead so service on the night is smooth and the wow factor is consistent from the first drink to the last.

Techniques we use

Foams and airs A nitrous oxide siphon turns any flavoured liquid — citrus, herb, spice or floral — into a light, flavour-concentrated foam that sits on top of a drink. An air is even lighter, almost cloud-like, made from a liquid with a surfactant. Both deliver flavour and aroma before the guest takes a sip.

Gel garnishes and spherification Agar agar or gellan gum sets flavoured liquids into cubes, pearls or thin sheets that melt on the tongue and release a burst of flavour. A mango-chilli gel on a rum cocktail, or a rose-water pearl on a mocktail, gives the drink a visual layer that distinguishes it from anything guests have tried before.

Sous-vide and cold infusions Spirits or cordials infused with fresh ingredients at a controlled temperature — vanilla, cardamom, saffron, dried fruit — develop deeper, more precise flavour than traditional maceration. These become the base for the signature menu.

Smoke-cloche and aroma presentation A glass cloche captures wood, herb or spice smoke over a drink and is lifted at the table, releasing a brief aromatic cloud. The effect is sensory and photogenic. See also smoky dry ice bar for the mist effect.

Edible films and printed garnishes Thin, flavoured wafer papers or rice-paper films carry printed logos, patterns or phrases — popular at corporate events and branded activations — and dissolve on the surface of the drink.

Planning the menu

A molecular menu of four to six drinks works better than a larger one. Each technique takes time to prepare in advance and requires consistency from the first serve to the hundredth, so we focus the menu rather than spread it thin. We recommend two or three cocktails and two or three mocktails so the experience is open to every guest.

Service pace

Molecular drinks take slightly longer to prepare than standard pours, so we recommend pairing the molecular bar with a main bar that handles volume service. The molecular station becomes the destination drink — something guests choose once or twice during the evening for the experience — rather than the default bar.

Ideal events

Luxury wedding receptions, sangeet and cocktail evenings, corporate product launches, award nights, brand activations and any event where the host wants a premium, conversation-starting experience.

Pricing

The molecular bar is quoted as a premium addition or standalone setup, based on the menu, techniques and event size. Every event is quoted to your guest count, menu and venue. Ask for a free, itemised quote.

Responsible service and licensing

State excise laws govern serving, transporting and storing alcohol, and rules differ between states and venues. Often the venue or a licensed caterer supplies and serves alcohol; your quotation will state clearly who supplies beverages. We guide you on the permissions to check, and we serve only where it is permitted, to guests of legal drinking age.

Questions

Molecular Bar Setup: questions

See all questions

Are the molecular ingredients safe to consume?
Yes. We use food-grade additives — agar agar, gellan gum, soy lecithin, xanthan gum — in the same small quantities used in modern restaurants. All ingredients are handled with standard food-safety practices.
Can the molecular bar serve non-alcoholic drinks?
Yes, and we recommend it. Molecular mocktails using fresh fruit infusions, herb foams and gel garnishes are some of our most visually striking drinks and are open to every guest regardless of age or preference.
Does the molecular bar replace the main bar?
We recommend running the molecular station alongside a main bar. The molecular station is the destination experience — something guests visit for a signature drink — while the main bar handles steady volume service through the evening.
How much space and power does the setup need?
The molecular counter needs roughly the same footprint as a compact bar, plus a small prep area for the mixologist. A power point is required for the sous-vide circulator or any heating equipment. We confirm requirements when planning your event.
Can you print our logo or event name on the drink?
Yes. Edible printed films can carry a logo, monogram, date or short phrase and are dissolved on the surface of the drink. This is popular at corporate activations and weddings. Lead time for printed edible films is usually five to seven days.
